Guest chef, Chef Isa together with Maya Brasserie kitchen team will whip up servings of traditional authentic dishes from Hulu Perak especially for this promotion.

KELADI kemahang atau nama saintifiknya colocasia esculenta merupakan sejenis tumbuhan ubi jenis keladi daripada keluarga araceae yang lazimnya tumbuh liar di kawasan agak lembap dan subur. Menurut cerita orang dahulu kala, nama Kampung Kemahang diperoleh kerana kewujudan keladi itu yang banyak tumbuh meliar di kawasan itu. keistimewaan keladi kemahang tidak gatal sama ada daun, pelepah dan sulur keladi. Namun, punca ia tidak gatal masih tidak diketahui hingga kini. jika salah teknik masakan, boleh menyebabkan keladi tersebut bertukar menjadi gatal dan tidak boleh dimakan. “Cara masak keladi ni senang... lepas dicampurkan bahan asas seperti tempoyak dan lada, kacau sesekali saja. Masa di atas dapur jangan kerap mengacau atau balik-balikkan keladi, sebab boleh tukar jadi gatal sekali gus jejaskan rasa masakan,” katanya. Mengikut petua orang dahulu, semasa mengambil batang keladi kemahang, ia perlu dicabut terus dari perdunya dan tidak boleh bertindih bayang si pengambil atau bayan...
